1 carrot
2 tomatoes
1 cucumber
2 pickles
2 sm. radishes
2 scallions
Chopped parsley
2 tbsp. olive oil
Whole lemon juice
1 tsp. salt
Ground pepper
Snack or starter

 

Wash the vegetables and peel the vegetables that must be peeled. Grate a carrot. Cut the tomatoes, fresh cucumber, pickles, small radishes, scallions to small cubes. Put the cut vegetables in a big salad dish. Salt the parsley.

Pour on the salad oil and mix it to cover the mixture with the oil. Pour the lemon juice and scatter the spice. Mix again and serve the salad.

Serves 6.
